Salad days

Summertime and the hills are a-browning. Long evenings stretch into mild nights. Too hot to use the oven. Time to make salads. And if you don’t have very much in the fridge, then you just have to get creative.

This is what happens when the only vegetables you happen to have on hand are carrots and cooked beetroot. They get grated together with a scrape of orange rind, some diced cucumber, some chickpeas, cumin and nigella seeds and an experiment with Bests Mayonnaise (sadly it doesn’t measure up to QP standards, but it did the job), and here you are, a salad we quickly named ‘Hideous Pinky’ thanks to it’s colour and slightly moroccan flavour, as a sort of tribute to a film of a similar name starring Kate Winslet.

And one of J’s creations from earlier in the week, a warm vegetable salad with a tahini/soy/mirin dressing. These are the consolations of summer..
