Truffles may well be my favourite way to eat chocolate. I love the way the bitter cocoa dusts the tongue before the just-sweet-enough-ness of the ganache melts its way into the equation. And their ephemeral quality, enjoyed almost more in afterthought than in the brief moment of existence in the mouth. A metaphor for life perhaps?
I just managed to take a photo before *someone* ate the last of them..

250g dark chocolate – I used about 50g or roast almond chocolate for a bit of tooth
200g cream, as fatty as you can get
1t instant coffee, soaked in
2T creme de cacao or something similar
1/3 t finely grated orange rind

and dutched cocoa to roll in

Drat! I wish I hadn’t eaten them all already..
