White chocolate and green tea ice cream

I am addicted to Japanese green tea. In leaf form, or as powder (matcha), alone or softened with dairy as icecream or a smoothie. Or lending some necessary backbone to white chocolate.

100g white chocolate
2 tsp matcha
3 eggs, separated
2 tbsp uber thick greek yoghurt
1 tbsp caster sugar
1 tbsp white creme de cacao
1tsp vanilla
a few grains of salt

Melt the white chocolate in a bain marie, when melted add the matcha and mix in very thoroughly. Or you could sift the matcha in with a tea strainer if you’re more organised than me.
Whisk the eggwhites to soft peak and gradually add sugar.
Mix all the remaining ingredients together, add the green chocolate and mix well.
Plop in a blob of eggwhite to break it up before folding in the rest of the whites.
Decant, cover, and freeze.

With double the amount of chocolate, this would make a happy green chocolate mousse.
