Serious mousse

This may be my all-time favourite recipe. Perfect for breakfast. As good a place to start as any. πŸ™‚

200g Dark chocolate – 70% seems to be about right. Any higher and you’re heading towards savoury territory
4 eggs, separated
30-50g caster sugar
30ml liquid – shiraz is my first choice, but creme de cacao, something orange flavoured or even juice would be fine if you had to.
1 Tbsp of the densest greek yogurt you can find. Scrape it off the foil or delve to the bottom of the tub.

Melt the chocolate bain marie style, whisk the bejeesus out of the whites, gently adding sugar once it starts looking peaky. Whisk the yolks, adding shiraz and yoghurt, then the chocolate. Introduce a blob of egg white into the chocolate mix to lighten it up, then gently fold in the rest of the whites. Decant, cover, and chill – or even freeze. Then lick the mixing bowl.
